Restaurant-style hibachi chicken fried rice made right at home. This hibachi recipe is loaded with savory flavor, stir-fry chicken, fresh veggies, seasoned rice, and a side of tasty yum yum sauce to dip. An easy recipe for a fun family dinner to make and eat together.
Season and cook chicken. Heat your griddle, skillet or large wok to medium-high heat. Add sesame oil, garlic, and ginger. Once fragrant add diced chicken. Cook chicken for 5-7 minutes until internal temp reaches 165ºF, stirring to get a golden brown sear on the outside. Toss with stir fry sauce, then move chicken to a plate; cover with foil to keep warm.
Season and cook vegetables. To your griddle or skillet, add all vegetables, garlic, sesame oil, and ginger. Toss to combine and sauté for 5 minutes until softened, but still have a bite. Toss with stir fry sauce, then remove from the griddle and add with the chicken on a plate and cover.
Season and cook rice. To the hot griddle, add sesame oil, garlic, ginger, and rice. Toss to combine and heat through. Once heated through, create a well in the center and add your two eggs. Break yolks and using a large spatula, combine slowly with rice, cooking the eggs. Finish rice with stir fry sauce.
Serve with sauce. Scoop rice onto serving plates then add chicken and vegetables. Drizzle with yum yum sauce or offer it on the side for dipping.

Feel free to swap out the rice with noodles.
Feel free to use any blend of vegetables you prefer.
Try steak, pork, or shrimp in place of or in addition to chicken! Just be sure to cook each to the proper internal temperature.
To save time, or if you have picky eaters, you can use onion powder in place of onions.
