This delicious kielbasa and pierogie sheet pan meal is made with frozen pierogies, kielbasa bites or coins, bell peppers and red onion then finished off with chives. No sauce needed! Everything bakes together on one pan for a quick and easy weeknight dinner! Ready in 25 minutes!
12ozkielbasa bitesor slice rope kielbasa into coins about ½" thick
4tablespoonbutter or oilto grease pan

Instructions
Prep oven and baking pan. Preheat oven to 425ºF. Coat a baking sheet with a thick layer of butter or oil. Spread evenly.
Prep veggies. Seed and chop bell peppers. Peel and slice red onion.
Add ingredients to sheet pan. Add peppers, onions, pierogies and kielbasa bites (or sliced coins) to baking sheet. Spread out evenly.
Bake. Cook for 20-25 minutes or until pierogies are golden brown and bell peppers and onions have softened. Half way through, give everything a stir and flip the perogies to more evenly cook everything.
Add toppings and serve. Remove from baking sheet using a spatula and serve warm, topped with fresh or dried chives.
