Make filling. In a saucepan, combine the diced strawberries, sugar, and lemon juice. Cook over medium heat until strawberries release their juices, about 5 minutes.Mix cornstarch with 1 tablespoon of water to create a slurry, then add it to the strawberry mixture. Stir until thickened, about 2-3 minutes. Remove from heat and let the filling cool completely.
Prep for baking. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare dough. Unroll puff pastry sheets and cut each sheet into 6 rectangles, making a total of 12 pieces.Spoon about 2 tablespoons of the cooled strawberry filling onto the center of 6 rectangles.Place the remaining 6 rectangles on top and press the edges together with a fork to seal. Beat the egg in a small bowl and lightly brush it over the tops of the strudels.
Bake. Place strudels on the prepared baking sheet and bake for 18-20 minutes, or until golden brown and puffy. Remove from the oven and let cool slightly.
Add icing. In a small bowl, whisk powdered sugar, milk, and vanilla extract together until smooth. Drizzle icing over the slightly cooled strudels. Let the icing set before serving.
Notes
To air fry: Preheat air fryer to 375°F and cook the strudels for 10-12 minutes or until golden and puffed.
Adjust the thickness of the icing with a little more milk or powdered sugar if needed.
