- Puff pastry dough. You can find a 2-pack of dough in the frozen food section.
- Strawberries. Fresh strawberries are ideal but you can use frozen or even strawberry jam as the filling to save time.
- Sugar. This sweetens and thickens your filling.
- Lemon juice. Fresh or bottled works. This add some tart flavor to balance out the sweetness. It's a must! Without it, the strudels will taste kind of dull.
- Cornstarch. This thickens the filling. You can also use pectic if you prefer but I have found corn starch works better.
- Egg. This gives your dough a nice golden-brown coating. It's not mandatory.
For the Icing
- Powdered sugar. No need to sift unless you notice clumps.
- Milk. Any kind. Half and half or heavy cream will work too.
- Vanilla extract. You can also try almond extract or maple syrup for a spin.

Strawberry Toaster Strudels
Ingredients
- 2 sheets puff pastry dough thawed
- 2 cups strawberries diced
- ½ cup sugar
- 2 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 egg
Icing
- ½ cup powdered sugar
- 2 tablespoon milk
- 1 teaspoon vanilla extract

Instructions
- Make filling. In a saucepan, combine the diced strawberries, sugar, and lemon juice. Cook over medium heat until strawberries release their juices, about 5 minutes.Mix cornstarch with 1 tablespoon of water to create a slurry, then add it to the strawberry mixture. Stir until thickened, about 2-3 minutes. Remove from heat and let the filling cool completely.
- Prep for baking. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare dough. Unroll puff pastry sheets and cut each sheet into 6 rectangles, making a total of 12 pieces.Spoon about 2 tablespoons of the cooled strawberry filling onto the center of 6 rectangles.Place the remaining 6 rectangles on top and press the edges together with a fork to seal. Beat the egg in a small bowl and lightly brush it over the tops of the strudels.
- Bake. Place strudels on the prepared baking sheet and bake for 18-20 minutes, or until golden brown and puffy. Remove from the oven and let cool slightly.
- Add icing. In a small bowl, whisk powdered sugar, milk and vanilla extract together until smooth. Drizzle icing over the slightly cooled strudels. Let the icing set before serving.
Notes
- To air fry: Preheat air fryer to 375°F and cook the strudels for 10-12 minutes or until golden and puffed.
- Adjust the thickness of the icing with a little more milk or powdered sugar if needed.
