    Berry Salad Ingredients
    • Strawberries. Use fresh strawberries in this salad.  The strawberries have been halved in this recipe, but could instead be left whole or quartered. Be sure to remove the top stem and leaves (hulled).
    • Blueberries. Wash and towel dry before using. Blot using a paper towel to absorb extra moisture. This will help the berries to be well coated with the dressing.
    • Blackberries. Use fresh blackberries in this salad, blot to remove excess moisture after washing.
    • Raspberries. Use fresh raspberries in this salad. Again, blot dry.
    • Lime juice. Fresh lime juice tastes best in this salad. It's much more flavorful; however, bottled lime juice can be used if fresh isn’t available. For extra zing, you can also add some zest from the peel of your lime to the dressing.
    • Honey. Use a good quality honey for the best flavor.
    • Fresh mint leaves. Small whole leaves look stunning in this dish. You can also slice or chop larger leaves if you prefer.

    Ingredients 

    • 1 lb strawberries hulled and halved
    • 5 oz blueberries
    • 5 oz blackberries
    • 5 oz raspberries
    • 1 lime juiced (2 tbsp)
    • 2 tablespoon honey
    • ¼ cup fresh mint leaves lightly packed

    Instructions

    • Add the halved strawberries, blueberries, blackberries and raspberries to a large salad bowl.
    • Make dressing. Combine lime juice and honey in a small bowl using a whisk or fork until well combined.
    • Drizzle dressing over berries. Gently toss to coat. 
    • Top salad with fresh mint leaves and serve or cover and chill until served.

    Notes

    • Mint leaves can be finely sliced or chopped rather than added to the salad whole.
    • Any cut fruit can be used in this salad, alongside or in place of any of the berries.
    • Lime zest can be added to the dressing for extra zing.
