This unique broccoli salad features apples, craisins, red onion, and crunchy-salty seeds, all tossed in an apple cider vinaigrette made creamy with Greek yogurt! It's as good as it sounds and healthy too. Serve this side dish at your next potluck and wow the guests! Serves a crowd.
Make the dressing. Add dressing ingredients to a mason jar and shake until well combined.
Make the salad. Chop broccoli, apples, and onion then add the salad ingredients to a large bowl. Add sunflower and pepita seeds. Toss to combine.
Combine salad and dressing. Pour all of the dressing over the salad mixture and toss again to coat the salad.
Serve immediately or chill and serve.
Notes
This salad can be enjoyed immediately or chilled first. Chilling overnight helps marinate the flavors but vegetables will soften producing a less crisp salad. Chilling around 2 hours is ideal if you want it to be cold and refreshing.
