This easy chicken caprese sandwich recipe is a flavorful and healthy lunch or dinner option, featuring juicy chicken, fresh mozzarella, and tangy yet creamy caprese ingredients on ciabatta bread. Chicken can be grilled or made on the stove top. Ready in just 15 minutes!
1boneless skinless chicken breastsliced in half (2 chicken cutlets)
1teaspoononion powder
1teaspoongarlic powder
½teaspoonItalian seasoning
1tomatosliced
4slicesMozzarella cheese
4 tablespoonPesto
salt and pepperto taste
2sprigsfresh basil
2ciabatta rollslightly toast if desired.
Instructions
Slice chicken. Slicing chicken breast in half horizontally on a cutting board to create two thinner pieces.
Season chicken. Dry chicken with a paper towel if needed to remove excess moisture then sprinkle with onion powder, garlic powder, Italian seasoning, salt, and pepper.
Cook chicken. Add seasoned chicken to the grill or stove top skillet heated over medium-high heat. Cook for about 5 minutes on each side or until the internal temperature reaches 165°F.
Add pesto to rolls. Lightly toast rolls if desired. Place the ciabatta rolls on a flat surface. Spread a generous amount of basil pesto on both sides of each slice of bread.
Add cheese, tomatoes, and fresh basil. On one side of the ciabatta, layer mozzarella slices. Next, add two slices of fresh tomatoes. Sprinkle fresh basil over the tomatoes. Season tomatoes with a pinch of salt and pepper to enhance their natural flavor.
Add cooked chicken. Place cooked chicken cutlet on top of the tomato slices.
Top sandwich and serve. Place the other half of the ciabatta on top. Slice the sandwich in half if desired and serve immediately.

Light toast the rolls if you'd like. Be careful not to over toast as the sandwich can become dry.
