Smoky and flavorful steak along with bell peppers and onions are wrapped in a warm tortilla and served with toppings of your choice. Ready in just 30 minutes. No marinade required. These steak fajitas are easy to make on busy nights and come with a delicious pop of smoky spice from chipotle peppers in adobo sauce.
Prepare vegetables. In a bowl, toss peppers and onions with 1 tablespoon oil and 1 teaspoon salt into a bowl.
Cook vegetables. Preheat Air Fryer or oven to 350ºF. Add veggies to the airfryer basket or a baking sheet and cook for 12 minutes. When done, set aside and cover to keep warm.
Season beef. In the vegetable bowl, add steak and adobo pepper. Sprinkle with fajita seasoning and ½ teaspoon of salt (if salt is not included in the fajita seasoning), and add 1 tablespoon of oil. Toss to coat.
Cook steak. Add seasoned beef to the air fryer or oven and cook for 10 minutes.
Warm and fill tortillas. While steak is cooking, heat tortillas in the microwave for 10-15 seconds or until just lightly warmed. Fill each tortilla with vegetables and steak.
Add toppings and serve. Add any toppings desired. Serve warm!
Notes
If using an air fryer, shake the vegetables and steak halfway through the cook time to ensure even cooking.
If cooking on the stove top, cook vegetables and steak in a large skillet or dutch oven, over medium-high heat and stir as needed. Add extra oil if needed to prevent sticking.
Adjust the amount of peppers in adobo sauce based on your spice preference. For those who enjoy a spicier kick, feel free to add more. If you prefer more mild fajitas but still enjoy the adobo flavor, reduce the amount accordingly.
