This fajita recipe is:
Easy to make. The steak and veggies cook together and you only need a handful of ingredients for the beef fajitas to come together.
Versatile. You can use your favorite seasoning blend and the cut of steak you prefer. Pre-cut steak saves time. Toppings can be whatever you like and are totally optional!
Meal-prep friendly. Fajitas for dinner are absolutely delicious; however, you can also enjoy the steak and veggie mixture over rice, which is great way to put a new spin on leftovers. Or add the steak and veggies over a salad for lunch.
★ Ingredients You'll Need ★
These fajitas are made with minimal ingredients so they come together quickly. Below is a look at everything you need to make the recipe.
- Sirloin steak. You want to cut the steak thinly and roughly in all the same size strips so that it cooks evenly in the air fryer.
- Bell peppers. For the best flavor and pops of color you’ll want a mix of green and yellow peppers. De-seed them and cut them into even strips.
- Onion. Both yellow and sweet onion will work here. You can also use red onion if you'd like. Try to cut them thinly and the same size as the peppers so that all of the vegetables remain crisp.
- Seasoning. Grab a pack of fajita seasoning and a bit of salt. From there, you can adjust how much you use based on preference.
- Avocado oil. Or any neutral-based oil will work here.
- Chipotle pepper in adobo sauce. This adds a delicious kick of heat to the beef fajitas. Only add as much in as you like spice.
- Flour tortillas. If you have time, warm them in the oven prior to serving the fajitas. It makes the entire dinner more comforting.
- Limes. For a squeeze of fresh lime juice.
- Cilantro. Optional but adds freshness and flavor.
That's all you need for delicious fajitas!
Now if you want to add some extra flavor and texture, here are topping ideas:
- Cheese! Cotija, queso fresco, and Colby Jack or a blend of Mexican cheeses all would work great. Add cheese to warm steak and veggies to melt or if you prefer non-melted, let things cool, then add cheese.
- Sour cream. As much or as little as you'd like.
- Tomatoes. Fresh diced tomatoes, salsa, or pico de gallo.
- Avocado. Fresh-sliced avocado or guacamole.
- Jalapeños. Fresh or pickled. Seeds left in for added heat!
Have everyone customize their own fajita by offering toppings separately. To cut down on kitchen time you can prep the vegetables in advance or buy them pre-cut.
Rice, refried beans, and shredded lettuce are nice side items to make these fajitas into a full meal.

★ Tips & FAQs ★
What do Chipotle peppers in adobo sauce taste like?
Chipotle peppers in adobo sauce add earthy, smoky, and slightly spicy flavor. The adobo sauce itself is a blend of chipotle peppers, tomatoes, vinegar, garlic, and various spices. The pepper component contributes to the sauce's smokiness and heat.
Chipotle peppers in adobo sauce adds a nice aroma and a layer of warmth and depth that complements the other fajita ingredients, making it a popular choice for adding a lot of flavor in one step.
Overall, it brings a unique and bold flavor to dishes that is both distinctively smoky and delicious.
What cut of beef is best for fajitas?
Truly, any thin type of steak can work for beef fajitas. Flank steak is a popular choice because it is so cost effective, however, sirloin steak and skirt steak both give a juicy bite as well.
How do I get my fajita meat tender?
Choose a tender cut of meat. Skirt steak and flank steak are commonly sold pre-cut as "fajita steak" but these cuts of meat can be tough.
So you may want to marinate the meat for at least 30 minutes in a bit of lime juice, salt, and rub with oil before cooking or go with a more tender cut of beef like sirloin steak.
Feel free to add fajita seasoning if marinading to infuse flavor while you are tenderizing the meat.
How can I add more flavor to my fajitas?
You can easily add more spices to the mixture that you love or scale back on the fajita mix.
If you like a kick of heat, use more of the adobo sauce or add in a pinch of cayenne pepper to the mix.
Storing Leftovers
Once cooled, the fajita mixture can be stored in an airtight container in the fridge for up to 3 days.
You can either reheat the fajitas in the microwave in intervals (stirring as needed) or on the stove over low heat.
Enjoy leftovers as fajitas again or add the steak and veggie to a rice bowl to create something new.
