You'll love this Asian-inspired spin on Sloppy Joes. Made with ground pork in a sesame-ginger barbecue sauce, topped with a fresh cucumber salad. This easy dinner is ready in just 20 minutes!
Wash and slice green onions, separating whites from greens.
Peel and slice cucumber then set aside in a bowl with ¼ cup of the ginger-sesame dressing, 1 tablespoon sesame seed, and the scallion greens. (Toss cucumbers to coat in dressing.)
Heat a large skillet over medium-high heat. Add pork, scallion whites, and garlic paste. Stir until browned, about 4-6 minutes.
Add ginger-sesame dressing, ketchup, Sriracha, and remaining sesame seeds to pork; cook for an additional 2 minutes.*
Season with salt and pepper as desired. Reduce heat to simmer to keep warm.
Using a slotted spoon, open and stuff toasted sesame seed buns with ground pork, then layer on several slices of cucumber.
