Melt butter in a large pot (8 quarts) over medium-high heat. Add onion and celery and cook for 4 minutes or until the tender and the onions are translucent.Mix in the ground beef, and cook until brown. Drain the beef.
Pour beef, onion, and celery mixture back into the pot. Stir in hamburger seasoning and cooked bacon. Mix in the diced potatoes and pour beef broth into the pot. Bring to a boiling, then reduce heat and simmer for 30 minutes or until the potatoes are very tender.
Mix in cream cheese until it is melted, then gradually stir in the cheddar cheese until it is melted and completely mixed in then remove from heat. Serve soup hot topped with additional cheddar cheese and green onion, if desired, on top.
Notes
To drain beef, use a colander placed over a bowl to catch the drippings. Let drippings cool then scrape into the trash so they do not go down your sink drain.Cook beef until browned for added flavor. Vegetables should not brown unless you prefer a more smokey, charred flavor.
