Here's an old-fashioned quick appetizer or lunch with German roots. Made with bologna (or smoked sausage), Swiss cheese, onions, and pickles, all tossed in a mustard vinaigrette. Ready in just 10 minutes! No cooking required!
1teaspoononion powderor add fresh, thinly sliced onions to taste
2tablespoonLowensenf mustardmore or less to taste
1 tablespoongrapeseed oil

parsley or chivesfor garnish, fresh or dried
2tablespoonmayonnaise or sour creamfor creamier texture
Instructions
Slice bologna, Swiss cheese, and pickles into thin strips and place in a medium sized bowl. (Be sure to reserve pickle juice for the dressing.)
In a small bowl, mix together vinegar, pickle juice, onion powder (or onions slices), mustard, and grapeseed oil to form a dressing. Add mayo or sour cream if desired.
Pour dressing over bologna, cheese, and pickles and gently toss to coat. Garnish with parsley or chives if desired.
Notes
Let marinate for 10 minutes before serving for best flavor.
If using a different meat other than bologna, be sure the packaging specifies that it is fully cooked or cured and safe to consume right out of the package.
