mint leaves, whipped cream, extra Oreos as desired
Instructions
Prepare Crust:
Crush Oreo cookies in a food processor. In a large bowl or in the food processor, mix the melted butter into the cookie crumbs until well combined.Press mixture evenly into the bottom and up the sides of a pie dish to form the crust. Use the back of a spoon to press it firmly.Place crust in the refrigerator to chill while you prepare the filling.
Make Filling
Whip the cream. In a large mixing bowl, use an electric mixer to whip the heavy cream just until stiff peaks form. Be careful not to overwhip. Set aside. Melt marshmallows with milk. In a saucepan over low heat, combine milk and marshmallows. Stir constantly until the marshmallows are completely melted and the mixture is smooth. Add mint and green color. Remove pan from heat, stir in the mint extract and green food coloring until well blended. Chill filling in the fridge for about 10 minutes. Gently fold the cooled marshmallow mixture into the whipped cream.
Assemble Pie:
Pour filling into the chilled Oreo crust, spreading it smooth and flat with a spatula.
Chill, Garnish, Serve
Place pie in the refrigerator and let chill for at least 4 hours or until set. This will allow the flavors to meld and the pie to firm up.Once pie is set, garnish with additional whipped cream, chocolate shavings, Oreo Cookies, and/or fresh mint leaves. Slice and serve chilled.
Notes
Lightly grease your pie pan for easier serving and slicing.
Allow pie to set in the refrigerator for the full recommended time to achieve the best texture and flavor.
To create a marbled effect, gently swirl the green food coloring into the filling instead of fully incorporating it.
For a stronger mint flavor, adjust the amount of mint extract according to your preference.
To make the pie more decadent, consider adding chopped chocolate pieces or chocolate ganache between the crust and filling layers.
You can also melt the marshmallows in the microwave in a large glass bowl. Heat in :30 intervals and stir in between until melted.
