- Butter. Salted butter, melted.
- Milk. Any % works. Full-fat will give you a slightly creamier pie.
- Marshmallows. The mini ones melt nicely and are easy to measure but large ones work too.
- Mint extract. I prefer peppermint extract, it's stronger. It's similar to a candy cane; however, mint extract will also work and will give you a more mild mint flavor if that's what you're after.
- Whipping cream. You'll need to make sure to use heavy whipping cream so it can be whipped and made fluffy. Half and half will not work.
- Green food coloring (optional) but adds that festive touch of green this pie is famous for. If you are anti-food coloring though, this pie still looks very nice in an off-white color.

Kid-friendly Grasshopper Pie
Ingredients
- 24 Oreo cookies
- ¼ cup butter melted
- ½ cup milk
- 3 cups marshmallows
- 2 tablespoon mint extract
- 2 cups whipping cream
- 2-3 drops green food coloring (optional)

- mint leaves, whipped cream, extra Oreos as desired

Instructions
Prepare Crust:
- Crush Oreo cookies in a food processor.In a large bowl or in the food processor, mix the melted butter into the cookie crumbs until well combined.Press mixture evenly into the bottom and up the sides of a pie dish to form the crust. Use the back of a spoon to press it firmly.Place crust in the refrigerator to chill while you prepare the filling.
Make Filling
- Whip the cream. In a large mixing bowl, use an electric mixer to whip the heavy cream just until stiff peaks form. Be careful not to overwhip. Set aside. Melt marshmallows with milk. In a saucepan over low heat, combine milk and marshmallows. Stir constantly until the marshmallows are completely melted and the mixture is smooth.Add mint and green color. Remove pan from heat, stir in the mint extract and green food coloring until well blended. Chill filling in the fridge for about 10 minutes. Gently fold the cooled marshmallow mixture into the whipped cream.
Assemble Pie:
- Pour filling into the chilled Oreo crust, spreading it smooth and flat with a spatula.
Chill, Garnish, Serve
- Place pie in the refrigerator and let chill for at least 4 hours or until set. This will allow the flavors to meld and the pie to firm up.Once pie is set, garnish with additional whipped cream, chocolate shavings, Oreo Cookies, and/or fresh mint leaves. Slice and serve chilled.
