This Bacon Weave Breakfast Casserole combines eggs, crispy bacon, shredded potatoes, and melted cheese for a hearty, crowd-pleasing brunch dish. Easy to prep, make-ahead friendly, and beautifully topped with a golden bacon lattice. Perfect for weekends or holidays!
Use 8 slices of bacon to make the bacon lattice: arrange 4 strips side by side on a lined baking sheet, then weave the other 4 strips over and under them to form a square pattern. Adjust so it’s flat and even. Lay remaining 3 slices of bacon on the lined baking sheet to cook and crumble later for the egg mixture.
Bake bacon at 400°F for 15–20 minutes (or 350°F for thinner bacon) until crisp. When done, chop the 3 separate pieces into bits and set aside.
Mix eggs, cheddar, hash browns, bacon bits, and half and half in a large bowl. Season with salt and pepper.
Grease an 8x8 dish with bacon drippings, then pour in the egg mixture and spread evenly. Reduce oven temp to 350ºF.Bake at 350°F for 25–30 minutes, or until the center is set. Remove from oven.
Pat bacon lattice dry, place on top of casserole, and garnish with sliced green onions.
Notes
Thick-cut bacon works best.
If using frozen hash browns, microwave in 1-minute intervals, stirring between, until thawed and at room temperature.
