This recipe is inspired by the Greek veggie pita wrap served at one of my favorite local lunch spots. I could probably eat these every day! They are so good and actually healthy too. Easy to make at home. No cooking required. Ready in 10 minutes! A tasty little lunch or dinner.
Prepare vegetables. Thinly slice and dice red onions. Quarter and slice cucumbers, peeling the skin first if desired. Chop romaine. Dice tomatoes.
Add toppings to pitas. Lay pitas flat and spread each with 3 tablespoon hummus.Top each pita with lettuce, tomatoes, red onion, cucumber, feta, black olives and then drizzle with Greek dressing.
Serve. Fold pitas and eat like a taco.
Notes
Use plain or any flavor hummus you prefer.
Try tzatziki sauce in place of or in addition to Greek dressing if you'd like.
Pocket pitas can be used instead, opened and stuffed.
