A simple side dish made with cabbage and homemade noodles. Great for serving with Polish sausage or any kind of pork for a quick and easy meal. Kid-friendly too!
Sauté shallot in a dutch oven with 2 tablespoon butter over medium heat for about 5 minutes.
Add chopped cabbage and continue cooking for another 5-10 mins or until cabbage is softened to your liking.
For spaetzel, bring a large pot of water to a boil. Mix together eggs, flour, and salt.Fill potato ricer with batter and press over boiling water. Let noodles cook for about 30-45 seconds then scoop out with a spider strainer.
Add spaetzle noodles and remaining butter to cabbage mixture, add salt and pepper to taste and toss. Serve hot!
Notes
Substitute homemade noodles with egg noodles if you'd like.
Feel free to omit the shallot and cabbage if you just want plain homemade noodles.
