Barbecue shrimp and grits is one of our favorite dinners! It’s a southern classic often served at restaurants in South Carolina that’s really very easy to make at home!
Cook bacon. Separate strips of bacon and lay flat on a lightly greased baking sheet. (Use a bit of bacon fat to grease the pan to prevent sticking) Bake at 350˚ for about 15-20 minutes or until desired level of crispiness. Crumble or chop and set aside.
Cook shrimp. Peel and devein shrimp (if needed). Grill shrimp at 350-450F° on a skewer or grill pan for 3-4 minutes on each side or until pink. Or fry shrimp in a pan over medium-high heat, until pink all the way through about 4 minutes on each side.
Cook grits. In a large pot or dutch oven, bring water to boil, add grits. Turn to low and cover for 5 minutes, stirring occasionally. Stir in cheese, garlic butter and salt.
Layer and serve. Layer grits, shrimp, bacon and green onion in a bowl and top with barbecue sauce. Serve piping hot!
