    ★ Why You'll Love this Recipe ★

Made with fresh strawberry filling and flaky puff pastry dough, this homemade treat is simple to prepare and will make your morning so much sweeter.

This is a fun recipe to make with kids on weekends, or just for fun. These strudels can be a special treat for birthdays or holidays, too.

Drizzled with icing and served warm, these always get gobbled up quick!

    Make-ahead Friendly

Just like the popular store-bought breakfast food, these homemade toaster strudels can be made ahead and frozen for an easy heat-and-eat meal.

So prep a big batch — don't bake them — wrap them in plastic wrap, or layer them in an airtight container (separating with parchment or wax paper) and put them in the freezer. Just pop one in your toaster oven or air fryer when you need a quick breakfast.

    Feeds a Crowd

Alternatively, you can feed house guests easily by baking the whole batch at once. This recipe makes 6 strawberry strudels but you can double or triple it to make enough to feed your guests.

    Try these for special occasions

While these are great served warm and fresh from the oven, they also serve well at room temperature, making these a great go-to for brunch. Think Mother's Day brunch, bridal and baby showers, or as a Valentine's Day treat.

    ★ Ingredients You'll Need ★

These delicious breakfast strudels come together using ready-made dough, fruit filling, and icing.

Here's a look at everything you'll need to put these together.

    For the Strudels

    • Puff pastry dough. You can find a 2-pack of dough in the frozen food section.
    • Strawberries. Fresh strawberries are ideal but you can use frozen or even strawberry jam as the filling to save time.
    • Sugar. This sweetens and thickens your filling.
    • Lemon juice. Fresh or bottled works. This adds some tart flavor to balance out the sweetness. It's a must! Without it, the strudels will taste kind of dull.
    • Cornstarch. This thickens the filling. You can also use pectin if you prefer, but I have found corn starch works better.
    • Egg. This gives your dough a nice golden-brown coating. It's not mandatory.

    For the Icing

    • Powdered sugar. No need to sift unless you notice clumps.
    • Milk. Any kind. Half and half or heavy cream will work, too.
    • Vanilla extract. You can also try almond extract or maple syrup for a spin.

★ How to Make this Recipe ★

The process is pretty simple. Here's a look at how to prepare these strawberry puff pastry strudels.

How to Make Homemade Strawberry Toaster Strudels
    1. Chop strawberries, remove leaves.
    2. Make the filling using strawberries, sugar, and corn starch to thicken.
    3. Add filling to puff pastry dough rectangles.
    4. Place top layer of dough and seal the edges.
    5. Bake then let cool.
    6. Mix together icing ingredients then drizzle on top.

Simple as that to make your own pastries that taste great and are made with fresh fruit, no preservatives or junk ingredients.

    ★ Tips & FAQs ★

What fruit fillings are good in strudel?

You can use just about any fruit as filling for toaster strudel. You can even use a blend of fruits. Try strawberries, blueberries, raspberries, peaches, or a mix of berries. You can adjust the sugar if needed.

What are some non-fruit fillings I can use in strudel?

Try adding cream cheese, or creating chocolate or Nutella filling. The key is to keep the quantity of fill the same so the pastries are not overfilled.

Can I add flavor to icing?

It's easy to customize icing. Add a splash of almond extract, maple syrup, or lemon zest for extra flavor in your icing.

Can I use jam instead of fresh strawberries in strudel?

Yes. You can swap the fresh strawberry filling for store-bought strawberry jam for convenience. It may produce a sweeter end result due to sugar content.

How do I prevent the filling from leaking out of toaster strudels?

    Make sure to:
Spread out the filling when adding to dough.
Use a fork to crimp the edges tightly.
Avoid overfilling. Use the amount recommended in the recipe.
Cut small vents on top to release steam if needed.

    Instructions

    • Make filling. In a saucepan, combine the diced strawberries, sugar, and lemon juice. Cook over medium heat until strawberries release their juices, about 5 minutes.
Mix cornstarch with 1 tablespoon of water to create a slurry, then add it to the strawberry mixture. Stir until thickened, about 2-3 minutes. Remove from heat and let the filling cool completely.
    • Prep for baking. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • Prepare dough. Unroll puff pastry sheets and cut each sheet into 6 rectangles, making a total of 12 pieces.
Spoon about 2 tablespoons of the cooled strawberry filling onto the center of 6 rectangles.
Place the remaining 6 rectangles on top and press the edges together with a fork to seal.
Beat the egg in a small bowl and lightly brush it over the tops of the strudels.
    • Bake. Place strudels on the prepared baking sheet and bake for 18-20 minutes, or until golden brown and puffy. Remove from the oven and let cool slightly.
    • Add icing. In a small bowl, whisk powdered sugar, milk, and vanilla extract together until smooth.
Drizzle icing over the slightly cooled strudels. Let the icing set before serving.

    Notes

    • To air fry:  Preheat air fryer to 375°F and cook the strudels for 10-12 minutes or until golden and puffed.
    • Adjust the thickness of the icing with a little more milk or powdered sugar if needed.
