I’m ready for fall, baby! It’s not that I really want to say goodbye to summer yet but let’s face it. It’s already gone. At least in my neck of the wood here up north. Plus I love my boots, the crisp fall air, pumpkins, changing leaves, tailgating at the university footballs games and OF COURSE Halloween… So many things to love. Since I’m mentally already ready for fall I figured I better start rolling out some pumpkin recipes for all of you starting to plan your Halloween parties. This is a super easy Halloween party snack. You can add your own touch by picking out some fun fall or Halloween themed sprinkles.

Oh and if you want to simplify things a bit, instead of sandwiches, just serve the pumpkin fluff as a dip.

Ingredients
 

  • 15 oz pumpkin Puree
  • 8 oz cool whip
  • 1 box instant vanilla pudding 1.34 oz
  • ¼ tsp pumpkin spice
  • 48 vanilla wafers
  • Fall colored sprinkles

Instructions

  • Mix together pumpkin puree, vanilla pudding and thawed cool whip.
  • Spoon pumpkin dip on to a vanilla wafer and top with a second wafer to make a sandwich. Smooth edges with a knife.
  • Roll sandwiches in sprinkles until sides are completely covered. Serve immediately or chill and serve.
