First there was pizza. Then there was breakfast pizza.
What better way to start your day than with three cute little sunny-side up eggs staring up at you. Split with a friend on the back porch with a margarita (what?) and all my breakfast dreams come true.
This dish is inspired by a dish served at one of my favorite meet-up spots, The Breakfast place in Erie, PA. They have a fluffy, crispy, buttery sandwich on the menu appropriately named the "Must Try." How could I not? Of course I did. And once I discovered the simple goodness of hot peppers and eggs in the morning, I haven't stopped ordering it. I will admit I feel a teeny bit guilty for having already "tried" it a number of times. And even more guilt because once I find something I like it's hard for me to venture out of that happy zone.
So today I'm sharing with you my pizza version of the lovely "Must Try" sandwich. I found some ready-made pizza crusts after buying a pizza crust mix and then chickening out. The ready-made crusts were good but I am going to either find fresh made crust next time or actually try to make my own crust. See, I just had visions of me tossing crust dough into the air like they do at pizza shops an then having my dough drop on my kid-mopped floors or get stuck to my dusty kitchen light. That would not be good, I thought. And so I had my excuse to be lazy. So you do what you need to do in the crust department but the toppings are going to make everything come together and be oh-so-tasty.
Side note: Margaritas are perfectly acceptable for "brunch," so if you feel the need to call this a brunch pizza in order to justify pairing this with a Margarita as I've done in my daydreaming, you go ahead and do that. This margarita is made with my current fav beverage Hidden Spirits cocktails. My favorite part about this margarita, aside from the lemony flavor, is the foam that happens when you blend the margarita. It's freaking heavenly.

Sunny-side Up Hot Pepper Breakfast Pizza
Ingredients
- 1 small pizza crust
- 2 tablespoon butter
- 3 eggs
- Hot pepper rings to taste fresh or pickled
- 1 cup mozzarella cheese
Instructions
- Preheat oven to 400˚
- Spread butter over crust and place on baking sheet. Bake for 3 minutes or until butter has crisped the crust. Remove from oven.
- Sprinkle crust with mozzarella cheese and add hot pepper rings. Crack 3 eggs over top, careful to not break the yolks.
- Return to oven. Bake for an additional 10-12 minutes or until egg whites have full cooked.
