    First there was pizza. Then came breakfast pizza. Sunny-side-up eggs, hot peppers, and melty mozzarella cheese join forces for a simple yet epic twist on a classic you’re going to love.

    You only need five things to make this beauty—ready-made pizza crust, a little butter, melty mozzarella cheese, eggs, and hot pepper rings. Simple, quick, and packed with flavor.

    What better way to start your day than with three sunny-side-up eggs smiling back at you? Share it with a friend on the back porch with a cup of coffee and you’ve got breakfast dreams come true.

    This recipe is a nod to my favorite meet-up spot, The Breakfast Place in Erie, PA. They serve a crispy, buttery sandwich called the “Must Try,” and I haven’t stopped ordering it since my first bite.

    Easy Crust, Simple yet Epic Toppings

    Start with ready-made pizza crust (less risk of dough mishaps in my kitchen!) but feel free to make your own. The toppings—hot peppers, eggs, and cheese—are what really make this breakfast pizza oh-so-tasty.

    • Pizza crust. I like to use a small, thin crust but any crust will work.
    • Butter. Salted.
    • Eggs.
    • Hot peppers. These can be fresh or pickled.
    • Mozzarella cheese. Shredded.

    Can I use a different type of cheese for breakfast pizza?

    Yes! While mozzarella melts beautifully, you can swap in cheddar, pepper jack, or even feta for a different flavor twist.

    What kind of crust works best?

    A ready-made pizza crust is quick and easy, but you can also use homemade dough, flatbread, or even naan for a smaller portion.

    How do I keep the eggs from overcooking?

    Bake the pizza partially before adding the eggs, then return it to the oven just until the whites are set but the yolks are still runny.

    Can I add more toppings?

    Absolutely! Try adding cooked bacon, breakfast sausage, spinach, or mushrooms to make it heartier and customize it to your taste.

    Ingredients 

    • 1 small pizza crust
    • 2 tablespoon butter
    • 3 eggs
    • 8 hot pepper rings fresh or pickled
    • 1 cup mozzarella cheese

    Prevent your screen from going dark

    Instructions

    • Preheat oven to 400˚
    • Spread butter over crust and place on baking sheet. Bake for 3 minutes or until butter has crisped the crust. Remove from oven.
    • Sprinkle crust with mozzarella cheese and add hot pepper rings. Crack 3 eggs over top, careful to not break the yolks.
    • Return to oven. Bake for an additional 10-12 minutes or until egg whites have full cooked.

    Notes

    Bake on an upper rack to cook eggs more quickly.
