    This Bruschetta chicken casserole is a one-pan wonder that's perfect for feeding a hungry family on a busy weeknight.

    This is a one-pan, oven- baked casserole that layers pasta, chicken, sauce and cheese plus herbs all in one dish. Easy to make and easy clean up too.

    One-pan Bruchetta Chicken Casserole

    ★ Ingredients You'll Need ★

    Here's everything you'll need:

    Bruchetta Chicken Casserole Ingredients
    • Egg noodles. Uncooked. These will cook as the casserole bakes. You can also use pasta although you may need to include more liquid if using pasta since pasta is a bug thicker than egg noodles.
    • Cooked chicken. I use Short Cuts chickens or rotisserie chicken or you can use leftover chicken.
    • Chicken broth. Or water + chicken bullion)
    • Balsamic vinegar.
    • Salt. Sea salt or table salt. Adjust the level as desired/
    • Fresh basil.
    • Fresh Roma tomatoes.
    • Shredded mozzarella cheese.

    Easy. Layer each ingredient, including uncooked noodles, in an baking dish and then bake for 30 minutes.

    What does this Bruschetta bake taste like?

    The flavor is very fresh and vibrant. Hearty because we've got plenty of chicken and noodles here. And just slightly tangy thanks to the balsamic vinegar. It reminds me a lot of a gourmet pizza.

    And of course if you're ever had bruschetta as appetizer that combines fresh basil, mozzarella cheese and fresh tomato, then you'll recognize that same flavor combo here.

    Make it a meal.

    Add a side salad or a roasted veggie if you'd like. Garlic bread goes great with this casserole too!

    Make it low carb.

    Just leave out the noodles.

    You can also serve it with a side of crusty bread or cooked pasta as your carb instead of the noodles.

    Equipment

    • 8x8 baking dish

    Ingredients 

    • 1 cup dry egg noodles
    • 2 cups chicken broth
    • 1 cup cooked chicken, chopped
    • ½ teaspoon salt
    • ¼ cup balsamic vinegar
    • 3 tablespoon chopped basil
    • 3 Roma tomatoes diced
    • 1 cup shredded mozzarella cheese

    Garnish

    • Fresh basil or chopped parsley if desired

    Instructions

    • In an 8x8 baking dish, add uncooked egg noodles in an even layer.
    • Pour chicken broth over noodles.
    • Cut cooked chicken into bite-size pieces and layer evenly over top of noodles and broth. Season generously with salt.
    • Drizzle balsamic vinegar over chicken and add basil over top.
    • Layer diced tomatoes then mozzarella cheese evenly.
    • Cover with foil and bake at 425˚for 15-20 minutes. Remove foil the last 3-5 minutes to lightly brown the cheese.
    • Garnish if desired with basil or parsley. Serve hot!

    Notes

    You can use milk, half and half or heavy cream in place of some of the chicken broth for a creamy sauce. Heavy cream will produce a more rich flavor but will be higher in calories. So it's your choice here!
    Adjust the amount of salt you add to your desired taste. If your cooked chicken is already salted, you may need less or you may prefer more.
    You can use a large casserole dish if that's what you have.

      Do you use milk or heavy cream? The ingredients list says milk but the instructions say heavy cream.

        You can use either one! Heavy cream will produce a more rich flavor. Milk will contain less fat with a little less creaminess. Your choice. 🙂

          It's this in place of the chicken broth. Milk isn't showing up in the ingredient list.

          Hi Shelly, thanks for asking. Milk/cream is optional if you'd like a touch of creaminess to your sauce. You can replace some of the chicken broth or add a splash of cream in addition to the broth.
