Favorite summer activities include: visiting family and long-time friends, going to amusement parks, floating lazy rivers, canoeing down streams, catching lightening bugs, roasting s'mores, finding foods to grill, getting sandy, going on walks, making ice cream cones with sprinkles and a face.
And when the final days of summer start to close in, you mighty find me grilling pineapples in protest or maybe just denial.
I like to let summer linger into fall as slowly as possible. Come end of August, when everyone else is busy planning healthy back-to-school lunches with fresh fruits and veggies all neat in their bento boxes, I'm over here like, "Can we just grill one more thing and eat ice cream and... where's the rum?"
So, yeah. If you want to sit in my boat and ride out this whole summer thing well into September, hop in! Let's grill some pineapple, top it with ice cream and drizzle it with rum sauce while we soak up the last of the summer sun.
Because inevitably, we'll kiss our babies goodbye as they get on the school bus for the first time of a new school year year, we'll maybe cry a few tears... and then also jump for joy that we can sit for a minute with our coffee and not have to answer to "Mooooooooom" for a little while each day. We'll say we are so relieved, but we'll secretly miss it.
Oh summer, you are so simple yet so complex but we love you for everything you are.

Here's a look at everything you'll need to make these fun little grilled pineapple desserts.
- Pineapple rings. Fresh or canned works.
- Vanilla ice cream. Any kind.
Rum Sauce
- Brown sugar.
- Butter, salted.
- Heavy cream. Milk will also work if you don't have heavy cream.
- Spiced rum.
- Sea salt. Regular table salt works too.

Grilled Pineapple with Rum Sauce
Ingredients
- 4 pineapple rings
- 4 scoops vanilla bean ice cream
Rum Sauce
- ¼ cup brown sugar
- 2 tablespoon butter divided
- ¼ tablespoon heavy cream
- ¼ cup spiced rum
- 1 pinch sea salt

Instructions
- Make rum sauce. Combine brown sugar, butter, rum, cream, and a pinch of salt in a saucepan over medium heat; stir and simmer for 5–6 minutes until smooth and slightly thickened.
- Grill pineapples. Lightly grease grill with spray oil or butter and heat to 400ºF. Add pineapple slices and cook for about 3 minutes on each side or until pineapple has golden brown grill marks on both sides.
- Remove pineapple slices from grill. Let cool for 1-2 minutes then top with a scoop of vanilla ice cream on each. Drizzle with cooled maple rum sauce and serve immediately.
Notes
- Use a thin metal spatula to flip pineapples.
