These Lucky Charms Brownies are the perfect treat for St. Patrick’s Day! They’re super easy to make and you can sneak in a little extra nutrition with black beans, if you want. 🙂
Black beans in brownies? Say what?
I’m pretty much famous for trying to sneak healthy foods into brownies. Just ask my kids.
They’ve tried all my experiments from broccoli to lima bean brownies (neither would I recommend necessarily) and they are very quick to give me the thumbs down or thumbs up. So here’s our list of foods that have been brownie-approved (so far):
- Bananas
- Applesauce
- Zucchini
- Black beans
The lima bean brownies were edible, however a little too crunchy for our liking. The broccoli brownies were really the only epic fail. They went straight into the trash sadly. The problem was the smell! They smelled so bad we couldn’t even eat them. Ha! Live and lean.
A fun and wee bit healthier way to celebrate St. Patrick’s Day
So, you can add what you want to your brownies, or nothing at all. The beauty is you can use the recipe right off the back of the box and just add what you want. It’s not really technical. The texture may change to be a little softer than normal depending on what you add in.
I personally like black beans because they add some protein but the flavor and color blends right in with everything else so you can even tell they’re in there.
Tweak as you need to.
So, this post honestly isn’t really a recipe per say, it’s more of St. Patrick’s Day celebratory brownie, with some added vitamins. See, I typically don’t substitute any ingredients, I just literally throw in said fruit, bean, or vegetable into a brownie mix and that’s it. I may go lighter on the water a little if I’m adding a watery food like applesauce or zucchini. Sometimes I’ll add in an extra egg too if I want a more cake-like brownie.

But yeah, other than that, these are super straight forward with the focus being on the fun decorations! Lucky Charms, green food coloring and a pinch of gold sprinkles for the win!!
