    Skip the fast food line and make your own burritos, saving you money and time.

    These burritos are made with bacon, egg, and cheese but can be customized to incorporate sausage, other types of cheese, and you can even easily add veggies like healthy spinach or mushrooms!

    The salty and savory flavors of the bacon pair perfectly with the creamy richness of the cheese and the perfectly scrambled eggs.

    ★ Ingredients You'll Need ★

    This simple recipes requires just 4 ingredients plus salt and pepper.

    Here's what you'll need:

    • Bacon. You can cook your own or save time and buy pre-cooked bacon. Want to go lean? Try turkey bacon. You can also use cooked sausage, or for a vegetarian option, skip the meat altogether.
    • Cheese. Mild cheddar is faithfully delicious but feel free to change up the flavor by choosing any type of cheese you'd like. Just about any cheese works. Try colby jack, pepper jack, Havarti... whatever sounds good. I like to use feta if I am making these burritos vegetarian.
    • Eggs. I prefer organic eggs because they generally taste a lot better but feel free to go with what works for you and your budget. You can also opt to use egg whites only for a lower fat option.
    • Salt and pepper. Add these to taste. I add these into the eggs while cooking.

    I love to add hot sauce to these but that's totally optional.

    Here's a look at how to make these yummy breakfast wraps:

    How to Make Bacon Egg and Cheese Breakfast Burritos
    • Scramble the eggs.
    • Layer eggs onto each tortilla.
    • Add shredded cheese.
    • Add cooked bacon.
    • Fold to seal end and sides.
    • Wrap in plastic wrap and freeze or refrigerate.
    • Unwrap and reheat using the microwave just until warmed through.
    • Add sauce if desired.

    Vegetarian Variation

    I love to make a version that's a copycat Starbucks' breakfast burrito. To make this variation, I use feta plus cream cheese, fresh spinach, and sun-dried tomatoes. I use egg whites only for this, no meat, and no other cheese.

    Southwest Veggie Wrap Variation

    Another Starbucks special! You can easily achieve a homemade version by adding black beans, diced canned potatoes (drained and rinsed), Cotija cheese, pico de gallo, diced jalapeño, and cream cheese all wrapped in a tomato tortilla. No bacon, no other cheeses.

    As you can see, you can get very creative with this recipe or keep it basic. Mix it up week-to-week so breakfast is never boring!

    ★ Tips & FAQs ★

    For a Crisp Outer Shell

    You can crisp up the outside of these burritos two ways. Toast the finished burritos in a toaster oven for 2-4 minutes or until lightly toasted.

    You can also crisp each side of your burrito on the stovetop. Heat a skillet with a pat of butter over medium-high heat. Add the burrito to the pan after butter has melted, let each side of the tortilla cook for 2-3 minutes or until light golden brown.

    Optional Sauces

    I really love picante sauce on my breakfast burritos. You can also go with hot sauce which of course as some heat.

    Sliced avocado or guacamole pair well with these breakfast burritos as well.

    Creamy Hollandaise sauce is another great choice as well as white country gravy.

    Storing in the Fridge

    If sealed in plastic wrap and stored in the refrigerator, these will last for up to 5 days.

    Are these breakfast burritos freezer-friendly?

    Yes! This is a great breakfast recipe to make ahead so you have an easy breakfast to-go during the week.

    These breakfast burritos can be frozen for up to 3 months. To freeze, wrap each burrito in plastic wrap or store in an airtight container. Remove plastic then heat using the microwave for 1 minute on each side. (More or less depending on your microwaves power and you're desired temperature.)

    Can I substitute sausage for the bacon?

    Yes. You can use cooked sausage of any kind in place of the bacon. Turkey sausage makes a great, lean and tasty substitute. Crumbled breakfast sausage is also very good in these sausage burritos.

    Ingredients 

    • 8 eggs large
    • salt and pepper to taste 
    • 4 flour tortillas (10 inch)
    • 1 cup shredded cheddar cheese
    • 8 slices cooked bacon

    Prevent your screen from going dark

    Instructions

    • Heat a large skillet over medium-high heat.
      Coat with cooking spray or butter and add 8 eggs. Stir and cook just until eggs are set but still a little wet*, about 5 minutes.
    • Lay out 4 tortillas then layer each with ¼ of the scrambled eggs, ¼ cup cheddar cheese, and 2 slices of bacon.
      Wrap 3 sides in, then roll closed.
    • Wrap each burrito tightly in plastic wrap and refrigerate or freeze.
    • To reheat from frozen: Microwave each side for 1 minute.
      To reheat from refrigeration: Microwave each side for 30 seconds.
    • Serve with hot sauce if desired.

    Notes

    *You want to slightly undercook the eggs so that when you reheat these, the eggs do not overcook.
    Reheat time may vary depending on wattage of your microwave. Adjust as needed.
