    • Baking powder and baking soda
    • Salt
    • Walnuts
    • Butter. Or use oil.
    • Sugar. White or you can use brown for a more rich flavor.
    • Egg
    • Vanilla extract
    • Cranberry sauce
    • Crushed pineapples

    How can I make this healthier?

    Yes—you can you can sub in healthier ingredients like swap part of the all-purpose flour with whole wheat flour, reduce the sugar slightly, or even use applesauce in place of some butter for a lighter version.. You can add a scoop of protein powder. You can experiment with these little loaves to see what you like best and they are very forgiving. Just don't forget the basics — like the baking powder.

    Can I make this bread ahead of time?

    Definitely. This bread keeps well for 2–3 days at room temperature when wrapped tightly, or up to a week in the fridge. You can also freeze it for up to 3 months.

    Do I have to use walnuts?

    Nope! Pecans, almonds, or even leaving out the nuts entirely works fine. The bread will still be moist and flavorful.

    Equipment

    • loaf pan

    Ingredients 

    • 1 ½ cups flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ¾ teaspoon salt
    • ⅓ cup chopped walnuts
    • ½ cup butter
    • 1 cup sugar
    • 1 egg
    • 1 teaspoon vanilla
    • 14 oz cranberry sauce (ok to use less if using leftovers)
    • 8 oz. crushed pineapples

    Instructions

    • Preheat oven to 350ºF.
    • In a medium bowl, mix dry ingredients together in a bowl.
    • In a separate, larger bowl, cream sugar and butter together. Beat in egg then vanilla, cranberry sauce, pineapples and walnuts then fold in dry ingredients.
    • Pour batter into grease bread pan.
    • Bake for 55 minutes at 350˚ or until toothpick comes out clean.

    Notes

    • Bread is ready when a toothpick inserted into the center comes out clean. 
    • For moist bread, do not overbake.

        I see how that would be confusing. When you cream butter and sugar, you essentially are just completely mixing the two together. Hope that helps! Thanks for asking.
