I first tried a version of this salad at a wedding, and one bite was all it took. I knew instantly it was a recipe I needed to recreate and share.

Caramelized apples and vidalia onions are served over spring mixed greens topped with crumbled feta and chopped walnuts then drizzled with a tart honey mustard vinaigrette. Sounds good right? it is!

This tasty and unique salad with homemade dressing, comes together in a few steps.
Here's a look at what you'll need to do:

- Sauté the apples and onions.
- Mix the dressing.
- Layer greens, apples and onions in a serving bowl.
- Add feta cheese.
- Add walnuts.
- Drizzle with dressing and serve.

A spring blend works well. I love the variety in color, texture and flavor. However, you can use romaine or any type of lettuce or greens you prefer.
Granny Smith's signature tart flavor works well in this salad but if you prefer a different variety, you can certainly substitute any kind of apple you have on hand or that you like.
Leftover will store well for a few days in the fridge. Just be sure to store the dressing and salad ingredient separately. You'll also want to keep the apples and onions separate to prevent their moisture from wilting the salad.
Be sure to completely cool onions and apples before adding to the salad to prevent the greens from wilting.

Apple and Onion Salad
Ingredients
- 6 cups mixed greens
- 2 large granny smith apples cored and cubed
- ½ vidalia onion
- 2 tablespoon butter
- ½ cup crumbled feta cheese
- ¼ cup walnuts chopped
Honey Vinaigrette Dressing
- ½ cup grape seed oil
- ½ cup apple cidar vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon lemon juice
- 1 teaspoon minced garlic
- ¼ teaspoon pepper
- ¼ teaspoon salt

Instructions
- Sauté apples and onions. Melt butter in a skillet over medium heat. Add cubed apples. Add vidalia onion onions. Stir frequently and cook for about 3 minutes or until softened. Set aside to cool.
- Make dressing. Add dressing ingredients to a mason jar and shake until well combined.
- Combine salad and dressing and serve. Add mixed greens to 4 serving bowls and top with cooled apples and onion, then crumbled feta and walnuts. Finish with a drizzle dressing on top.
