- 1 teaspoon ginger paste or ground ginger
- 1 tablespoon brown sugar
- 1 curry powder
- 1 teaspoon turmeric
- 1 teaspoon coriander powder
Peanut Sauce
- ½ cup creamy peanut butter
- ¼ cup Thai coconut milk
- ¼ cup soy sauce
- 2 tablespoon chili paste (Sambal Oelek) or Sriracha sauce for heat, adjust to taste
- 1 tablespoon rice wine vinegar
- ½ tablespoon ginger paste

Instructions
- Butterfly chicken breasts and cut into 1-inchstrips.
- In a large mixing bowl, combine marinade ingredients: coconut milk, red curry paste, soy sauce, fish sauce, garlic, ginger, brown sugar, curry powder, turmeric, and coriander.
- Add chicken and marinate for at least 30 minutes in the refrigerator.
- While chicken is marinating, soak wooden skewers in water to prevent burning during grilling Skewer chicken onto the wooden skewers.
- Lightly grease grill then preheat to medium heat (350–400°F).Place chicken skewers on the grill and cook until browned on each side and the internal temperature reaches 165°F, about 3-4 minutes per side.
