    • 2 lb chicken breasts boneless, skinless

    Marinade

    • ½ cup Thai coconut milk
    • 2 tablespoon red curry paste
    • 2 tablespoon soy sauce
    • 1 tablespoon fish sauce
    • 1 tbp garlic paste
    • 1 teaspoon ginger paste or ground ginger
    • 1 tablespoon brown sugar
    • 1 curry powder
    • 1 teaspoon turmeric
    • 1 teaspoon coriander powder

    Peanut Sauce

    • ½ cup creamy peanut butter
    • ¼ cup Thai coconut milk
    • ¼ cup soy sauce
    • 2 tablespoon chili paste (Sambal Oelek) or Sriracha sauce for heat, adjust to taste
    • 1 tablespoon rice wine vinegar
    • ½ tablespoon ginger paste

    Garnish

    • 1 lime wedged

    Instructions

    • Butterfly chicken breasts and cut into 1-inchstrips.
    • In a large mixing bowl, combine marinade ingredients: coconut milk, red curry paste, soy sauce, fish sauce, garlic, ginger, brown sugar, curry powder, turmeric, and coriander.
    • Add chicken and marinate for at least 30 minutes in the refrigerator.
    • While chicken is marinating, soak wooden skewers in water to prevent burning during grilling Skewer chicken onto the wooden skewers.
    • Lightly grease grill then preheat to medium heat (350–400°F).
      Place chicken skewers on the grill and cook until browned on each side and the internal temperature reaches 165°F, about 3-4 minutes per side.
    • Serve skewers with peanut sauce and lime wedges.

    • Marinate at least 30 minutes (or up to 24 hours) for deeper flavor.
    • Cut chicken evenly. Uniform strips help the chicken cook evenly and stay moist.
    • Oil the grill grates. Lightly oil grates to prevent sticking and tearing.
    • Taste peanut sauce before serving. Adjust sweetness, salt, or spice to match your preference.
    • Rest briefly before serving. Let skewers rest 2–3 minutes so juices redistribute.
