    This is such a quick and easy recipe but one we make on the regular in our house, so I thought it was time we shared it here.

    Great for Celebrating Special Occasions

    This is an easy dessert to feed up to 8 people. It's quick to prepare yet is kid-friendly and feels big and special. Perfect for birthdays, milestones, anniversaries, promotions and holidays.

    Easy to Make

    If you can make regular cookies, you can easily make this cast iron skillet cookie. Simple enough for big kids to make themselves.

    Make it a Meal

    Serve this giant skillet cookies as dessert along with my Ground Beef Taco Pasta, a Citrus Salad with Pomegranate Seeds and Pink Sherbet Punch for any special occasion!

    Cast Iron Skillet Cookie Ingredients

    For the Cookie

    • Flour. All purpose flour. You can also use wheat flour.
    • Baking soda
    • Sea salt
    • Butter. Salted.
    • White sugar
    • Brown sugar
    • Vanilla extract
    • Eggs
    • Chocolate chips. I prefer semi-sweet but you can use milk chocolate.

    Topping

    • Ice cream. Vanilla or any flavor you like. You can even try making your own vanilla ice cream.

    What kind of toppings could I add?

    A scoop of vanilla ice cream, in my opinion, is not optional! Cold and creamy vanilla ice cream is so wonderful on top of a fresh baked and still warm, giant skillet cookie! Go even further and try adding caramel or chocolate syrup on top, sprinkles, nuts, crush candy, or even fresh fruit.

    Make it minty!

    Add scoop of mint chocolate chip ice cream instead of vanilla, crushed peppermint candies, replace chocolate chips with broken pieces of Andes mints or mint M&Ms. Perfect for mint lovers or if you've made this recipe several times, this helps bring new flavor.

    What if I don't have a cast iron skillet?

    You have a few options. You can buy one of course. You'll want a 12" skillet for this recipe. Shop cast iron skillets on Amazon
    If you don't want to splurge on or don't have the space for a new, heavy skillet, then you can use an 8x8 casserole dish or a pie pan.
    Make sure to grease whatever you use before you bake with butter. And keep an eye on things while baking. Using a different kind of pan can affect the amount of time needed to fully cook this giant cookie!

    What can I add to a big skillet cookie?

    Sometimes we add sprinkles to make the cookies festive for holidays, birthdays, or special occasions—you can usually find themed sprinkles at the store. Nuts are also a great addition; I love walnuts, pecans, or macadamias and like to think they make the cookies healthier. 😉 Just stir in any extras when you add the chocolate chips.

    What's the secret to soft cookies?

    In a nutshell, the secret is: patience. You want to bake this big cookie at a lower temperature than regular-sized soft chocolate chip cookies so it stays nice and soft yet firms up in the middle.

    Ingredients 

    Cookie

    • 2 ¼ cups flour
    • 1 ¼ teaspoon baking soda
    • 1 teaspoon fine sea salt
    • 1 cup butter (2 sticks) softened + more for greasing skillet
    • ¾ cup sugar
    • ¾ cup brown sugar
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 2 cups chocolate chips divided

    Topping

    • 8 scoops vanilla ice cream

    Instructions

    • Whisk together flour, baking soda and salt in a small bowl.
    • Mix butter, sugars and vanilla, in a large bowl, until well blended. Add in eggs and blend until you get a light and fluffy dough.
    • Slowly beat in flour mixture to eggs and sugar. Then fold in 1 ½ cups of the chocolate chips.
    • Grease a large cast iron skillet with butter.
    • Grab all of the cookie dough and roll it gently into a large ball. Then press it into the greased cast iron skillet. Build up the edges a little higher than the center since the edged cook faster.
    • Press remaining ½ cup of chocolate chips, scattered over the top of the giant cookie.
    • Bake in a preheated oven at 325˚F for about 25-35 minutes or until the center is just set. Cover with foil if you notice edges starting to get too dark early on in the baking.
    • Remove from oven and let cool for at least 5 minutes.
    • Slice like a pie and serve warm with a scoop of vanilla ice cream.

        Hi Allison, Yes. You absolutely can. Just cover with foil or plastic wrap while in the fridge. Remove before baking. Thanks for asking!

        Does that alter the cook time if it is a cold skillet?

          Hi Allison, it shouldn't change to cook time too much since the skillet will heat up quickly in the oven. Maybe an extra minute if anything. Just keep an eye on things and pull from the oven when the middle of the cookie is no longer "wet" looking.
