These vegetarian pita wraps are packed with veggies and layered with hummus, black olives, Greek dressing and feta cheese. This pita wrap does not lack flavor despite being meat-free.
Meal-Prep Friendly
These pack well to make a great lunch to take to work or take on picnics. I love these in the summer because they're so refreshing. Since you don't need to reheat these (they are served cold), you can wrap them in reusable beeswax wraps.
★ Ingredients You'll Need ★
Here's a look at everything you'll need to assemble these pitas:
- Greek-style pitas. These are thick and do not open. However, you can use pita pockets if you prefer. You can also use thin tortillas instead of pitas.
- Romaine lettuce. You can use spinach or spring greens as well. I like romaine because of its crunch.
- Cucumber. I prefer English cucumber but regular cucumbers work just fine, they are just a bit more watery.
- Tomatoes. Any tomato will work but I do prefer roma, grape or cherry tomatoes since they hold their shape well and are not too watery.
- Black olives. You can use kalamata olives if you prefer. Whole or sliced, just be sure they do not have seeds.
- Feta cheese. Crumbled feta adds richness and lots of flavor.
- Hummus. Plain or garlic hummus is great. Lemon hummus and roasted red pepper hummus are also very tasty. Truly, any flavor of hummus will work.
- Greek dressing. Choose your favorite bottled Greek dressing. I like Ken's.

Try adding roasted chickpeas, tofu, falafel or any plant-based "meat" product to these pitas.
You can add cooked chicken or steak to Greek pitas. Lamb is also a great option.
For a vegetarian protein boost, roasted chickpeas or falafel are great options.
Traditional pita bread is not low-carb. However, you can make these wraps more suitable for a low-carb diet by using low-carb tortillas, lettuce leaves, or cabbage leaves as the wrap instead of pita bread. I've tried egg white wraps that are flour-free and taste great! Or, simply add some extra lettuce and enjoy this as a salad.
To make anything more appealing to kids, I find that if you simplify the ingredients and offer them separately, it helps. Younger kids are more likely to try simple flavors and textures and when offered one at a time.
For bigger kids who are more adventurous, but might still be apprehensive about trying something new — or are picky about certain ingredients — serve the pita toppings separately. Then kids can build their own wraps according to their preferences.
Absolutely! You can use store-bought tzatziki sauce or make your own. It can be used in place of or in addition to the Greek dressing.
To make your own tzatziki sauce, combine Greek yogurt, grated cucumber (with excess water squeezed out), minced garlic, lemon juice, chopped dill or mint, olive oil, salt, and pepper. Mix well and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
Storing Leftovers
These wraps store well for a few hours, already assembled. After that they can get soggy. So if you're prepping these in the morning for lunch, then you are good to store them assembled. You may want to add Greek dressing right before serving. You can store that in a small salad dressing container.
Meal Prep
If you're meal prepping for the week, store components separately.
Pita bread can typically be stored at room temperature or in the fridge if you need it to last longer than the date on the package.
Chopped veggies without dressing can be stored in the fridge for up to 3 days.
Assemble the wraps when ready to eat. For best texture, spread the hummus onto each pita right before serving. Same with the Greek dressing.

Greek Veggie Pita Wrap

Ingredients
- 4 Greek style pitas white or wheat
- 4 oz hummus
- ½ cup romaine lettuce chopped
- 2 Roma tomatoes diced
- ½ red onion sliced
- 1 English cucumber chopped (peel if desired)
- 4 tablespoon crumbled feta cheese
- 4 tablespoon sliced black olives
- 4 tablespoon Greek dressing

Instructions
- Prepare vegetables. Thinly slice and dice red onions. Quarter and slice cucumbers, peeling the skin first if desired. Chop romaine. Dice tomatoes.
- Add toppings to pitas. Lay pitas flat and spread each with 3 tablespoon hummus.Top each pita with lettuce, tomatoes, red onion, cucumber, feta, black olives and then drizzle with Greek dressing.
- Serve. Fold pitas and eat like a taco.
