    These ham and cheese croissant sandwiches make a great breakfast or brunch for weekends. Especially if you're feeding a family or house guests because you can make many at once.

    These are a great go-to for making breakfast for visitors. They are kid-friendly and easy to put together without taking away too much from coffee time. We can relax and catch up with our guests while still offering a yummy breakfast.

    Baked Ham and Cheese Croissant Melt Sandwiches

    These little sandwiches make great finger food for an event like a birthday party, holiday, baby or bridal shower, Mother's Day or just a casual breakfast or brunch for a group. These sandwich are very easy to prep and cook in bulk. Which is nice because then you can spend more time enjoying yourself at the even. All while serving up something delicious.

    ★ Ingredients You'll Need ★

    You'll need just 4 main ingredients plus eggs if you're planning to layer an egg into your sandwiches.

    Here's a look at what you'll need:

    Ham and Cheese Croissant Sandwich Ingredients
    • Bakery croissants. The mini size is what I use since they are just large enough for one slice of ham and one slice of cheese.
    • Ham. I prefer black forest ham but choose your favorite type and brand of ham. There are plenty to choose from. I like thinly shaved ham so I can fold it and add some texture to the sandwiches.
    • Havarti cheese. This is a white cheese with mild and creamy flavor. It's similar too but a bit more subtle in flavor than Swiss cheese. Not as sour as Swiss. You could also use cheddar, or any jack cheese — try pepper jack if you like a little heat!
    • Fried egg. Optional. If you'd like this to be more of a breakfast sandwich than a brunch sandwich, then a fried egg is the way to go. These croissant melts are delicious with or without the egg though.
    • Hot sauce. Optional but adds delicious pepper flavor and of course, a little spice!

    Should I include the egg or not?

    Either way. Both ways are delicious! It's truly up to you or your guests.

    You can add some protein for a more filling and breakfast-like sandwich by simply adding an egg. You can add a fried egg, poached egg, or really any type of egg you like that will sit well on a sandwich.

    These little sandwiches are also excellent with just ham and cheese. So if you're short on time or eggs, just skip add them!

    These croissant sandwiches are an excellent breakfast on the go.

    This is my one of my favorite go-to breakfast foods. I will make these with or without a fried egg depending on how much time I have or what I'm in the mood for.

    I've taken these ham and cheese croissant sandwiches to get-togethers and they hold up well. I prefer to assemble them ahead and then bake them right before eating. But, if you won't have access or time to bake them at your event, then just bake them right before and cover with foil to hold in some heat.

    Serves a crowd.

    This recipe make a dozen mini sandwiches but you can certainly multiply the recipe really easily depending on how many people you're trying to feed.

    Can I make these full sized sandwiches?

    Yep! Looking for more of a lunch sized portion? You can scale these up a size by choosing full sized croissants. You'll just want to double the ham and cheese.

    Ingredients 

    • 1 dozen fresh-baked mini croissants sliced in half lengthwise
    • 12 slices black forest ham
    • 12 slices Havarti cheese

    Optional Egg

    • 12 eggs
    • 4 tablespoon butter

    Instructions

    • Preheat oven to 400ºF.
    • Prepare croissants. Slice croissants in half and arrange bottom halves on a baking sheet.
    • Add ham and cheese. Layer croissant bottoms with with one slice of ham then one slice of cheese.
    • Optional Egg. If adding a layer of egg, fry individual eggs in a pan over medium-high heat with a little butter. Cook for about 2 minutes on each side, gently flipping with a spatula. Use a spatula to move each egg on top of the layer of cheese.
    • Bake. Place the tops half of the croissant onto each sandwich. Bake at 400˚F for 7-10 minutes or just until cheese has melted. Croissants should be light golden brown and crispy.

    If croissants start to brown too quickly, cover loosely with a sheet of foil.
