    Cajun Ham and Cheddar Biscuits

This recipe is super easy thanks to Bisquick!

There's nothing quite like fresh from the oven biscuits but in our house, we don't have a lot of time to fuss with food that involves a lot of prep.

We typically have Bisquick on hand to save on time.

However, if you don't have any on hand or would prefer to make your own biscuit mix, check out this recipe for homemade biscuit mix.

    ★ Tips & FAQs★

What if I'm not a fan of Cajun seasoning?

If you prefer a simpler flavor, you can leave out the seasoning all together.
Or if you're just looking for a different flavor, more similar to the famous Red Lobster cheddar bay biscuits, you can replace the cajun seasoning (just use half the amount) of Old Bay.

Can I make these drop biscuits?

Yes. Make these in a muffin tin or on a baking sheet. You can make these in a muffin pan or drop the dough and on lined baking sheet and pop them in the oven. They can get a little crumbly, so I like using a muffin tin and if I have some, I'll use liners. Making them drop style though saves time and adds a little more texture though so you choose!

    Could you call these “dinner”?

I mean... I did eat them for dinner with a side salad. It felt balanced. 🙂 These really work well for literally any meal. I've made them for breakfast, brunch, lunch and dinner. And also snacked on them. So, enjoy them however you want!

    Instructions

    • Make dough. In a large bowl, stir together biscuit mix, milk, ham, ⅓ cup of the cheese (reserve rest for topping), Cajun seasoning and butter together just until a thick dough forms.
    • Drop dough. Using a cookie scoop, drop biscuit dough onto a non-stick or lined baking sheet.
Sprinkle remaining cheese on top of each biscuit.
    • Bake at 425˚F for 10 minutes or until a fork poked through the middle comes out clean.
    • While biscuits are baking, combine garlic and onion powder and parsley with melted butter.
    • Brush with topping. Remove from oven. Brush seasoned butter onto the tops of the biscuits while biscuits are still warm.

    Notes

    • To melt butter for the glaze: Place butter in a bowl or ramekin cup and cover with a paper towel. Microwave to 30 seconds.
    • Don't over mix dough. Fold in green onions (optional).
    • You can use a muffin pan instead of a baking sheet if you prefer.
