    These Greek veggie tacos are great for an extremely quick lunch or dinner without sacrificing flavor. They are healthy too!

    Done in 10 minutes. Truly. These Greek veggies tacos are deliciously simple and full of flavor. So great for a busy weeknight and perfect for hot summer evenings.

    For the love of all things Mediterranean

    I'm pretty fond of all things Mediterranean. Going to Greece is actually on my bucket list. The crystal clear water and white and blue painted town just speak to me!

    But I especially love Greek food and would so enjoy tasting authentic Greek food.

    For now though, these taco are pretty darn amazing and taking me straight to Greece with each bite. Feta cheese, olives and hummus are a combination that can't be beat. Sometimes I wrap these ingredients, put them on a sandwich, float them in a tortilla boat! Or in this case, stuff them into a soft taco shell.

    These Mediterranean flavors are always good because the flavors are so rich.

    Not only do I love Greek inspired flavors, I love how easily you can make a dish that's bright and fresh using only vegetables, cheese, hummus and olives... truly no meat necessary.

    Vegetarian food is not just for vegetarians.

    For the record, I'm not a vegetarian. I just don't think you always need to have meat in your meals. Like these veggie tacos. I had them for dinner tonight.

    Was I sad that they didn't have meat? Nope. Did I even realize that something was missing? Honestly, no.

    If you, however, are missing meat here, you can add chicken or steak to these tacos. Both would taste great with the rest of these flavors.

    Taco lovers: you will love this!

    You really don't need anything special to make these. But one thing I found help to making these soft sided tacos is a taco stand. if you're a serious taco person, you may want to pick up your own set of taco stands. I really love mine! They're especially useful for filling and serving soft taco shells.

    Ingredients 

    • 2 soft taco shells
    • 2 tablespoon hummus
    • 4 slices cucumber quartered
    • 1 roma tomoato cubed
    • 2 tablespoon thinly sliced and chopped red onion
    • Leafy green lettuce
    • 6 kalamata olives
    • 2 tablespoon crumbled feta cheese
    • 2 tablespoon Greek dressing
    Shop ingredients at Walmart.comAdd ingredients, then choose Pick Up or Delivery.

    Instructions

    • Spread 1 tablespoon of hummus onto each soft taco.
    • Fill tacos with cucumbers, tomatoes, red onions, olives and crumbled feta.
    • Top with 1 tablespoon of Greek dressing on each and serve!
