A great use for ground pork.
Using ground pork makes the cooking process really quick and easy. This is really similar to canned Man-wich or sloppy Joes but it's homemade and tastes a bit more fresh.
★ Ingredients You'll Need ★
Here's a look at everything you'll need to make this BBQ pork topped cornbread pie.

- Ground pork. Fresh ground pork, not seasoned works best.
- BBQ Sauce. Make your own barbecue sauce or if you're short on time, use your favorite bottle BBQ sauce.
For the Cornbread Pie
- Cornbread mix. I love Kruteaz brand.
- Eggs. Corn-fed-hen-laid eggs always taste a little better if you can swing them!
- Milk. Any kind.
- Honey. Or sugar if you prefer or have than on hand.
- Creamed corn. Canned, no need to drain.
- Green chilies. Canned, no need to drain.
- Sour cream. Full fat tastes best but light works too.
- Butter. Salted.

This dish comes together in just a few steps.
Here's a look at the process:

- Mix together cornbread batter.
- Add batter to greased cast iron skillet and bake.
- Make barbecue sauce.
- Brown pork in skillet then add sauce.
- Cool cornbread, then slice.
- Top cornbread with BBQ pork and serve!

Use bottled barbecue sauce or make your own!
You can use store-bought barbecue sauce if you don't have the ingredients on hand, however, if you've got everything, it's very easy to just combine and stir over heat and create your own special sauce.
Start with my easy barbecue sauce recipe and then tweak it as you'd like to create your own homemade sauce!
This recipe is actually a two-for. I'll show you how to make skillet cornbread as well as a basic homemade barbecue sauce for the pork. If you love moist, buttery cornbread, then stay tuned...
To make my cornbread, I like to use Krusteaz cornbread mix. I add a few of my own ingredients to liven it up. It has delicious flavor and moisture. You can use whatever corn bread mix you like best but I just really prefer the flavor of their cornbread to the other box mixes out there.
You could serve this with green string beans, corn on the cob, roasted Brussels sprouts, macaroni and cheese, mashed potatoes and/or coleslaw which is great for warmer weather!
I love cooking cornbread in my cast iron skillet but if you don't have one, you can use a pie pan or a square baking pan instead.

BBQ Pork Cornbread Pie
Equipment
Ingredients
- 2 lbs ground pork
- 1 ¼ cups
barbecue sauce
CORNBREAD
- 1 box cornbread mix 15 oz
- 2 large eggs
- ¼ cup milk
- 2 tablespoon honey
- 14 oz creamed corn
- 4 oz green chilies
- 2 tablespoon sour cream optional
- ¼ cup butter melted
- ¼ cup butter softened reserve to grease pan

Instructions
- Mix ingredients for cornbread in a bowl until just blended. Smear cast iron skillet with a thick layer of softened butter. Bake at 400˚ for about 20 minutes or until just set in the middle.
- Brown pork in a large skillet or pot and over medium heat, stirring until pork is cooked through. Add all remaining ingredients and simmer for about 5 minutes to form the sauce.
- Cut a slice of the corn bread and top with barbecue pork to serve.

Hi! Looking forward to making this tonight. Quick question, can I leave out the creamed corn and chiles? I don’t have either on hand. Will it alter the bread too much without it?

Hi Rebecca, if you leave out the creamed corn then the bread is most likely going to be pretty dry. You can add regular corn, some extra melted butter probably 1/4 of a cup, and 1/4 cup of milk as a substitute. If you don’t have regular corn just add the butter and milk. The green chilies are for flavor. You could use chopped jalapeños, or any kind of pepper would be nice. Spicy peppers go really well with the sweet corn but even a diced bell pepper would add some nice flavor if you have that on hand. Heck, you could even use relish if you have some sweet relish in your fridge. I hope this helps. Enjoy!

Is it ok to just use Polenta as I don’t know if Cornbread mix is available in Australia.

Hi Cheryl, I think polenta would be a good substitute flavor-wise but cornbread mix is dry. In the US, polenta comes as a tube and is moist. So if that's how it comes in Australia too, you may want to cut out the eggs, cut the butter in half and only add milk if you feel you need it to loosen up the polenta mixture to form a batter when you blend everything together. Then just keep an eye on things as it cooks since the bake time may be different as well. Good luck and thanks for asking!
