You'll need just 6 basic ingredients, most of which you may already have, to make both the slaw and BBQ chicken.

For the Chicken
Boneless, skinless chicken thighs: Chicken breasts can work here too but may require you to adjust the cooking time. Also, breasts also don’t give off as much juice as thighs do either due to lower fat content.
BBQ sauce: Your favorite bottle barbecue sauces works or use my easy barbecue sauce recipe to make your own.
Dry ranch mix: This is something you can make yourself or if you’re saving time just grab a pack from the store. You’ll need enough for both the chicken and the coleslaw.
For the Ranch Slaw
Coleslaw mix: You can shred your own, or save a bunch of time using a store-bought blend of cabbage, red cabbage, and carrots.
Ranch dressing: Choose your favorite brand.
Optional: To add more tang to the slaw, trying adding 1-2 tablespoon of apple cider vinegar along with the ranch dressing.

The slaw and chicken each come together quickly, making this a no-hassle dinner to prepare.

- Mix together ranch dressing.
- Add cole slaw veggies and toss.
- Add chicken to crockpot and season then let cook.
- Remove chicken and cool slightly then shred.
- Add chicken back to crockpot and toss cover in barbecue sauce.

Make BBQ Chicken Sliders
Turn this dish into an appetizer by serving these on slider-sized buns. Savory or sweet Hawaiian rolls work great and will make twice as many mini sandwiches as regular-sized sandwiches.
You can easily alter the flavor of barbecue chicken by using a spicy barbecue sauce in place of a regular one.
Conversely, if you want to tone down the spice, trying adding a dollop of ranch dressing to the buns before serving. This will cool down any heat.
Chicken
Let the barbecue chicken cool completely before storing it in an airtight container in the fridge. It will last up to 3 days. Reheat the chicken in the microwave or on the stove until just warmed through.
Slaw
Made ranch slaw will stay fresh for 5 days in the fridge if stored in an airtight container.
If you toast the buns and then spread the inside of each bun with a light layer of mayo, they’re less likely to get soggy from the chicken.
Barbecue chicken tastes delicious as a sandwich, on top of cornbread, rolled up into a wrap, baked on top of a tray of nachos with cheese, or as a topping to a salad. BBQ chicken also makes a fun pizza topping. I personally love barbecue chicken on top of mac and cheese. It’s extremely versatile!
BBQ Chicken Sandwich with Ranch Slaw

Chicken
- 2 lbs chicken thighs boneless skinless
- 2 oz dry ranch dressing mix (2 packets)
- 16 oz barbecue sauce
Slaw
- 16 oz cole slaw mix
- ½ cup ranch dressing
Buns
- 8 brioche buns (or your bun of choice)

Instructions
- Prepare crockpot and season chicken. Add chicken to a lightly greased crockpot. Spread out into an even layer.Sprinkle chicken with ranch seasoning.
- Cook chicken. Set crockpot to low and cook for 4 hours or until internal temperature reaches 165ºF.
- Shred chicken. Remove chicken, allow to cool slightly, just enough to handle, then shred.
- Coat chicken in sauce. Add shredded chicken back to crockpot and add barbecue sauce. Toss to coat. Cover and allow sauce to warm while you prepare the coleslaw.
- Make slaw. Prepare ranch slaw dressing in a large bowl by combining ranch dressing with slaw mix. Toss to coat.
- Assemble sandwiches. Open each bun and top with shredded chicken and sauce, then slaw. Top each bun and serve.
Notes
- Use shredding claws, forks, or clean hands to shred chicken into bite-sized pieces.
- Toast buns and add a thin layer of mayonniase to prevent soggy buns, if desired.
