    This salad dressing tastes great with lemons or limes or both! So it's a great way to use up leftover lemons and lime as well as watermelon of course.

    ★ Ingredients You'll Need ★

    Here's a look at what goes into this delicious summer salad:

    • Watermelon. Make sure it's nice and ripe so that sweetness comes through.
    • Red onion. This balances out the sweetness and layers in mild spiciness and crunch.
    • Cucumber. You can use English or regular cucumber.
    • Mint. Fresh mint is a must. It adds an extra refreshing note to this salad and pairs perfectly with the watermelon and citrus.
    • Honey-roasted sesame seeds. You can also use regular sesame seeds.
    • For the dressing: Lemon and or lime juice, freshly squeezed is best; avocado oil, honey, and salt and pepper to taste. For an extra layer of flavor you can also add in Dijon mustard or red wine vinegar but these are not necessary.

    If you'd like to add a little spice to this salad, add 1-2 tablespoon of diced jalapeño to the dressing!

    Salad

    • 2 cups baby spinach or mixed greens of choice
    • 1 cup watermelon diced
    • 1 English cucumber diced
    • ½ red onion sliced
    • ¼ cup fresh mint chopped
    • ¼ cup feta cheese crumbles
    • 2 tablespoon sesame seeds

    Dressing

    • 2 tablespoon honey
    • 2 lemons   juiced
    • 2 limes juiced
    • 2 tablespoon avocado oil
    • salt and pepper to taste
    • 2 tablespoon diced jalapeño (optional for heat)

    • Prepare salad. Add spinach, diced watermelon, cucumber, onion, and mint to a large bowl.
    • Make dressing. Add honey, lemon juice, lime juice, avocado oil, salt, and pepper to a small bowl or mason jar with lid. Add diced jalapeño if desired.
      Whisk or shake until well combined.
