Are these chili burritos freezable?
Yes! These chili burritos are so easy to make and the best part is that they’re freezable too. Roll up each burrito in plastic wrap and freeze. To defrost, simply unwrap, sprinkle some shredded cheddar cheese on top and some hot sauce and nuke for 1 minute on each side.
I love to make these burritos for lunches or easy dinners for busy weeknights.
Can you use canned chili to make these chili burritos?
Making these burritos is pretty much my favorite way to use up leftover chili. However, yes, you could also use canned chili. It’s really not hard to make your own chili though. Make a bunch of it over the weekend, then you’ll have plenty for leftovers going into the new week. Check out my Crock-pot Coriander Chili recipe.
We love to make a big batch of this chili on Sundays for football watching with the family. If you don’t have time for that, then see if you can find a good organic canned chili to use.
What other types of freezable burritos are easy to make?
I sometimes make a similar burrito using re-fried beans and a mix of onions, green peppers and green chilies if I don’t have leftover chili. In fact I just made a batch of about 9 burritos the other day!
The Mr. and I both like to eat these for lunch and if you freeze them, they pack well for lunches to go. You could bake them if you like them crispy but I pretty much always just microwave them.
Could these be made into a casserole?
I’ve actually never tried this before but you could line several of these up in a pan, top with enchilada sauce and cheese and make them to feed a crowd. You could fancy them up with jalapenos, sour cream, salsa, olive, etc. too. I’m thinking it would be really good!
Do you like a little spice?
I personally love hot sauce (or anything spicy really) and my favorite is Frank’s. I love how it tastes mixed with cheddar cheese but feel free to use your own favorite hot sauce and/or salsa for topping.
Cheesy Leftover Chili Burritos
- 4 6" tortillas
- 1 cups leftover chili
- 1-2 tbsp taco seasoning more or less to taste
- Shredded cheddar cheese
- Frank's hot sauce
- In a mixing bowl, add taco seasoning to chili and stir to combine.
- Spoon 1/4 cup of chili onto each tortilla. Fold two opposite sides in about 1/2" then fold the other two side in as tightly as possible to form each chili-stuffed tortilla into a burrito.
- Sprinkle chili burritos with shredded cheddar cheese and microwave for 1-1:30 minute.*
- Top burritos with hot sauce to taste (I love Frank's!).
