What to do with leftover mashed potatoes? Make them into a savory waffle!
Crispy, fluffy, easy... potato waffles.
Mashed potato waffles are every bit as delicious as you'd expect. And so easy to make using leftover mashed potatoes and some butter so things don't stick. And because butter makes everything better, right?
Try potato waffles topped with chili.
Two things that we are make in bulk are chili and mashed potatoes. It just so happens that these two match up nicely.
Make the most of your leftovers.
Making brand new things from leftovers is one of my hobbies, truly. I'm one of those people that loves leftovers. I've actually met people that THROW AWAY LEFTOVERS. I'm not judging but... WHY?! Leftovers are the best thing ever! You get homemade food without the prep. Sometimes leftovers are even better the next day. But probably my favorite part about leftovers is reinventing them.
Leftovers, twice over.
I've turned leftover chili into chili burritos and today we're taking the last two helpings of chili and serving them over a potato waffle! Created from leftover mashed potatoes. Don't be afraid to make big batches of food and then use the leftovers in multiple ways. It'll save you time in the long run and will also save you from having half full containers of things in your fridge.

These savory waffles can be topped with so many different things so feel free to get creative (or clean out your fridge!) and top these with whatever your heart desires. Some ideas I had were: shepherd's pie deconstructed, leftover chicken & gravy, meatloaf, cheese, ranch, shredded steak and broccoli... you get the idea.

You'll need just a handful of ingredients to make potato waffles topped with chili.

- Leftover mashed potatoes. Or use store-bought.
- Butter. To grease the waffle maker.
- Leftover chili. Or use canned.
- Cheddar cheese. Shredded.
- Fresh parsley. For garnish.

Yes, you'll need a waffle maker. I use a Belgian one because we love thick, fluffy waffles—and it’s great for "waffling" other things too, like potatoes. If you're buying one, think about the style of waffles you like and what else you might want to try in it!
Potato waffles are super versatile! Here are some tasty topping ideas:
Sour cream and chives
Fried or poached eggs
Crispy bacon or sausage crumbles
Shredded cheddar or pepper jack cheese
Avocado slices or guacamole
Smoked salmon and cream cheese
Sautéed mushrooms and onions
Gravy (for a twist on poutine)
Hot sauce or sriracha for heat
Yes! Frozen shredded hash browns work great—just thaw and squeeze out excess moisture before using.

Potato Waffles with Chili
Equipment
Ingredients
- 1 cup mashed potatoes or less depending on your waffle maker
- 1 tablespoon butter
- 1 cup leftover chili
- ¼ cup shredded cheddar cheese
- 1 tablespoon fresh parsley for garnish

Instructions
- Preheat and generously coat your waffle maker with butter.
- Spoon mashed potatoes onto your waffle maker and spread out just a bit as evenly as possible.
- Close waffle maker and let cook for about 3-5 minutes. Potato waffle is ready when it's golden brown and doesn't stick to the waffle maker. Gently flip potato waffle onto a plate when done.
Notes
- If you don't have leftover chili, you can use canned chili.
- You could also top with sour cream, bacon, cheese, and chives for a loaded potato waffle.
