Crockpot Chicken Tortilla Soup

This easy crockpot chicken tortilla soup is so delicious and so easy it literally cooks itself!

You can serve it for dinner, lunch or even take it on the go. It makes a great take-to-work lunch so we usually make a big batch so there’s plenty of leftovers. We actually find this to be a perfect soup to take to tailgates during football season too!

Do you need to use the Bear Creek Tortilla Soup starter?

No, you don’t have to. It is just a time saver but it can be expensive so if you’d rather, you can use a blend of chili powder, cumin, garlic powder and onion powder to taste.

Instructions

  • 1. Put all ingredients minus the cheddar cheese and sour cream into your crockpot. Cook on high for 2 hours.
  • 2. After the chicken is thoroughly cooked, remove and shred it.
  • 3. Put the chicken back in the crockpot; stir in the sour cream and cheese and then it's ready to serve. Add optional green chilis and pepper flakes to taste.
  • 4. Flavor with fresh-squeezed lime juice to taste and top with tortilla strips.
